Pizza-On-A-Stick

(kinda)

Grape Tomatoes
Cubes of Mozzarella Cheese
Cubes of Pepperoni
Other pizza toppings (I used black and green olives)

Long toothpicks.

Italian Salad Dressing (the spray kind works very nicely)

Skewer all ingredients on a toothpick (I used that order, but it really doesn't matter) like a shish-kabab.

Arrange on a plate and spray (or drizzle) with Italian dressing.

Makes a super cute, and quite tasty appetizer!

Cold Artichoke Dip

I heart artichoke hearts. I can eat them straight out of the can. I wanted an artichoke dip, but not a hot one, so I made this up tonight. I'm pretty darn happy.

one can of artichoke hearts, chopped
one brick of cream cheese, softened
(roughly) one cup of sour cream
a handful of shredded mozzarella cheese
garlic salt
italian seasoning

Just mix it all together and refrigerate for awhile. I'm eating it right now with Frito's. Mmmmm...

Beer Dip.

My sister-in-law makes this all the time and I'm usually the one who ends up eating the majority of it. Once I start, I can't stop.

Ingredients:
2 (8 oz.) packages of cream cheese, softened
1 packet of Ranch dressing, NOT the Dip.
2 cups cheddar cheese
The neck of a beer. Preferably not a lite beer, but it works if you have nothing else. A nice Budweiser gives it a tangier flavor though.

Mix all ingredients together in a bowl. Leave in refrigerator for a couple of hours. My sister-in-law serves it with Wheat Thins. She also tries to make it a healthy snack by also serving it with carrots, which are actually pretty decent, and pea pods.

Green Grapes, Goat Cheese, Gpecans - The 3 G's.

This is an easy recipe, although not the quickest thing to make. Unless I'm just slow, these take some time. Don't be fooled by only having 3 ingredients.

1. Wash the grapes. And dry them off.
2. Using your (clean) fingers, grab the goat cheese and mold around the grape, then roll around in your hands to be sure it's smooth and round.
3. Roll cheese-covered grape in a bowl of chopped pecans.

These become so addicting. I kept them in a bowl in the refrigerator and every time I walked by, I grabbed one. But they're not exactly bad for you. You got your fruit, your calcium and your protein - perfect!

Cucumber - Frito Dip

My Aunt Marian made this for my bachelorette party - LOVED it! And I've made it a few times since...it's always a hit!

2 bricks cream cheese
2 cucumbers
1-2 T dried onion flakes
1 T milk
salt, pepper, dill to taste

Let cream cheese sit out for awhile to soften. Peel cukes, cut in half lengthways and scoop the seeds out with a tablespoon. Use a cheese grater to shred the cucumbers. Mix together cream cheese, cukes, onion and milk, add salt and pepper to taste. (I add a lot of dill because I love it, but this was not in Aunt Mar's original recipe). Refrigerate...it's best after it sits for awhile.

Most Important: Eat with Fritos! Really, tastes best with Fritos!
